4 Summer Cocktails - Easy to Make at Home

 Sunshine in the PNW gets us excited for fruit season. The inspiration behind this cocktail collection is simple but delightful drinks that you can make at home with a quick stop at your local farmers’ market or your own backyard! We hope you use these recipes as guidelines and not rules - You have blueberries but not raspberries? Use ‘em, it’ll still be delicious.  They say “what grows together goes together.” We source all of our grain and potatoes within a 30-mile radius of the distillery, this means there’s a myriad of other fresh agricultural products at your fingertips around Bellingham that would go great in any cocktail. Keep it fresh and keep it local! There are many excellent honey producers in Whatcom and Skagit counties. Shrubs from Shrub Farm are our go to for adding an extra fruity kick to any drink. Some classic cocktail ingredients we can’t consistently source locally, but we always recommend buying organic and using fresh citrus when possible.  Vodka & Raspberry Shrub Sour 2 oz Wheat Vodka¾ oz Lime Juice¾ oz Honey Syrup¼ oz Raspberry & Citrus ShrubA small handful (approx 5) of raspberries Pour liquid ingredients into a shaker tin. Add a handful of raspberries. Add a small scoop of ice. Shake vigorously for about 15-20 seconds. Strain and serve up in a small coup glass. Gin Mojito 1½ oz Gin ½ oz simple syrup ½ oz lime juiceSparkling WaterMint Sprigs    Add mint to the shaker tin. Very lightly press the mint. Add liquid ingredients and a scoop of ice to the shaker tin. Give a quick shake to mix ingredients. Strain and serve over new ice or dirty dump into a rocks glass. Top with sparkling water. Garnish with more mint.   Bourbon Peach Smash 2 oz Bourbon ¼ oz peach muddled½ oz honey syrup ½ oz lemon juice2 dashes angosturaTop with Sparkling Water   Add peaches to the shaker tin and muddle. Add liquid ingredients and scoop of ice. Shake for about 10-15 seconds. Dirty dump into rocks glass and top with sparkling water.    Russian Summer 1oz Potato Vodka1 oz Old Busker Coffee Liqueur1oz Coconut MilkSpoonful of cream of coconut Mint Sprigs    Add mint to the shaker tin. Lightly press the mint. Add liquid ingredients and scoop of ice. Shake for approx 20 seconds. Strain and serve in a rocks glass with a fresh large cube of ice.

½ oz lime juice
Sparkling Water
Mint Sprigs 
 
Add mint to the shaker tin. Very lightly press the mint. Add liquid ingredients and a scoop of ice to the shaker tin. Give a quick shake to mix ingredients. Strain and serve over new ice or dirty dump into a rocks glass. Top with sparkling water. Garnish with more mint.
 

Gin Mojito

Bourbon Peach Smash
2 oz Bourbon 
¼ oz peach muddled
½ oz honey syrup 
½ oz lemon juice
2 dashes angostura
Top with Sparkling Water
 
Add peaches to the shaker tin and muddle. Add liquid ingredients and scoop of ice. Shake for about 10-15 seconds. Dirty dump into rocks glass and top with sparkling water.

1oz Potato Vodka
1 oz Old Busker Coffee Liqueur
1oz Coconut Milk
Spoonful of cream of coconut 
Mint Sprigs 
 
Add mint to the shaker tin. Lightly press the mint. Add liquid ingredients and scoop of ice. Shake for approx 20 seconds. Strain and serve in a rocks glass with a fresh large cube of ice.
